WTZ A/CZ Investigation of biologically active compounds in oat seeds in Austria and Czech republic

Abstract
Among the common cereals, oats are consumed less than wheat and rice all over the world. However, it appears that consumption of whole grain oat brings some benefits to the consumers. Oat contains lipids with a high degree of unsaturation, proteins with favorable composition of essential amino acids, and fiber with a high content of α-glucan. Moreover, oat is the only cereal that contains avenanthramides (AVNs) and theirs levels are highly elevated during germination. These phenolic compounds are well known for their antioxidant, anticancer, and anti-inflammatory effect. By contrast, the information about the beneficial effects of AVNs and AVNs from germinating oat on the inflammatory bowel disease is scarce. To address this gaps, this project focuses on AVNs and their derivatives, and the role of sprouting on the level of AVNs during germination in seeds. The main aim of this project is to fill gap of knowledge and evaluate the changes in nutritional quality on a set of samples covering various conditions of oat sprouting and oat varieties. Discovery of novel compounds is strongly expected. Their structure will be investigated by the means of modern analytical chemistry. UHPLC-Q-Orbitrap mass spectrometry will be done at Crop Research Institute (CRI) in Prague and NMR will be done at University of Natural Resources and Life Sciences Vienna.
