Institutional conditions for the adaptability of quality standards of Austrian and Italian Geographical Indications

Abstract
Geographical Indications (GIs) help firms to protect common quality standards while highlighting the geographical origin of food. EU protected GIs are based on collective action, i.e. groups of firms define quality standards. Adaptations of quality standards are necessary due to international competition or changing consumer demand. Whether GI firms are able to adapt will be largely affected by formal and informal institutions of collective action. This study aims to understand the adaptability of quality standards of Austrian and Italian GIs. By analysing the action situation, we will comprehend how firms interact and define their quality rules, the collective time efforts for adapting quality standards and the factors affecting the adaptive capacity. Studying how quality is built and modified is relevant both from an academic (e.g., adaptability of institutions of collective action) and from a practical point of view (e.g., guidelines for adapting Product Specifications).
