Food Authenticity Markers

Abstract
The major objectives of this project addresses the reduction of large analytical datasets obtained from non-targeted and targeted mass spectrometric workflows to significant food authenticity markers typical for specific regions and/or quality. This will enable the set-up of affordable and accessible food testing procedures, which are based on the prior selection and validation process. The over-arching aims are the development, selection and combination of fit-for-purpose analytical methods and markers for highest confidence prediction models to assess food authenticity and quality as well as the harmonization with European standards.
