Bioactive products from milk and whey
Abstract
The present project is divided into two main project phases. The first part comprises the development of technologies for the isolation of individual milk or whey proteins such as lactofferin, α-lactalbumin, etc. During the second phase specific proteins will be hydrolysed using enzymes in order to produce bioactive peptides like lactoferricin. Subsequently these peptides have also to be separated and purified. Both, isolated proteins and peptides possess special properties which are beyond basic nutrition. The aim is to develop complete production technologies in which membrane and chromatographic processes as well as new membrane reactors will be applied.
