Research Focus
Research in fruit and vegetable processing focuses on combining innovative technologies with traditional processes. The goal is to enhance process efficiency and product quality by tailored modification of the structure of plant materials. Key technologies include Pulsed Electric Fields (PEF) and Ohmic Heating (OH), which are used to alter the cellular structure of fruits and vegetables. These methods improve drying, peeling, extraction, and cooking by enhancing mass transfer and enabling rapid, uniform heating. The work spans from fundamental studies on structure-function relationships to process performance evaluation. Additionally, tailored processing strategies are developed to reduce energy consumption, shorten processing times, and minimize waste. By integrating innovative approaches into conventional workflows, the research aims to support or replace traditional methods with more efficient thermal or non-thermal alternatives.
