Abstract:
Despite the importance of Pinot Blanc in Austria there is little specific knowledge about the aroma profile and no scientific study that has dealt with the typicality of Austrian Pinot Blanc wines. Thus, in the course of this thesis, consumers, experts and wine producers stated that Austrian Pinot Blanc wines are described with the aroma attributes “pear”, “apple”, “walnut”, “citrus”, “pineapple” and, in the special case of matured Pinot Blanc, “vanilla” and “oak”. Consumers understood the classification of wine into three categories that could help to improve the sales of Austrian Pinot Blanc wines. The knowledge that Pinot Blanc is a neutral grape variety was already well established. The typical aroma of neutral wines results from the interaction of many volatile substances. Ester compounds are crucial to the neutral wine’s aroma, which is why this work also seeks to quantify the ester compounds. In the course of this present study it could be shown that the concentration of some esters (mainly ethyl esters) was present in higher amounts in typical wines than in atypical wines. Regional typicity terms were not developed in the course of the study, but the results demonstrated regional differences. Wines from Styria are especially noteworthy with regard to their lower typicity rating. This does not necessarily mean that wines from Styria are more untypical, but that they may differ in their typicality from wines from Lower Austria, Burgenland and Vienna. This is confirmed by the results of the volatile profile. Finally, based on studies on viticultural and oenological influences on the aroma profile and using existing and newly generated knowledge, recommendations for the production of Pinot Blanc wines could be generated.
