This paper is about the evaluation of different qualities of hay from alpine and mountain meadows. The results have been used to acquire evaluation criteria and different categories of “wellness hay” quality. Some research studies have been carried out in cooperation with LFZ Raumberg-Gumpenstein and the Kärntner Almheu association, whose members manage their mountain meadows on the basis of common guidelines and offer the hay to hotels and wellness organisations. On one pilot farm the most important factors to produce “wellness hay” were worked out by comprehensive recordings done on five selected areas. For analytical and sensorial evaluation of hay some additional samples from other member farms were included. Six wellness hotels were asked about their experiences with mountain hay to get further information about the different applications. The results of the studies clearly indicated deficiencies in haymaking and storage and the therefore resulting low quality of “Kärntner Almheu”. To improve qualities in future, this paper includes actual recommendations, suggestions and a checklist to produce “wellness hay”. On the basis of the sensorial hay evaluation and the information from the hotels a quality standard for “wellness hay” has been defined, also considering hygienic and sensorial factors. In the future there will be a sensorial evaluation system to define and to categorise qualities of “wellness hay” and to assign it to different categories of application.
