These days food is available the whole year around and almost all of the time. “School on the farm” (“Schule am Bauernhof”, SaB) shows how food is produced and may persuade consumers to make the conscious decision of buying food that is produced in Austria, which is often slightly more expensive. In the literature, no data is available about the expenditure of working hours and the SaB’s economy. Thus, the aim of this Master’s thesis was to collect this missing data. A total of 20 farms (10 in Upper Austria and 10 in Carinthia) were investigated. These farms were categorised according to the intensity of the SaB activities. The manager of each farm was interviewed by means of a semi-standardised questionnaire (final method of collecting data) that was divided into the topics General Factors, Human Resources Management and Economy. The average expenditure of working hours for teaching a complete lesson (preparation, implementation and follow-up) was 441 minutes per person or 7.35 hours per person and per farm (minimum working hours: 330/5.50; maximum working hours: 810/13.5; SD: 96.6). The differences between the farms were 2.45 fold. The average special cost-free performance of the 20 farms per working hour (hourly wage) was € 10.3 per year (intensive, extensive or weekly lessons). The differences between the farms were up to 8.5 fold. If the price for each child was low (e.g. € 2.00), including a reimbursement of € 2.00 to the LFI, the output only consisted of the subsidies paid. The amount of the variable costs had a considerably larger influence, compared to the fixed special costs, on the resulting special cost-free performance per working hour per year.
