The traditional farm practice at alpine pastures in Austria plays a major role in agricultural and also touristical approaches in Austria. Livestock that grazes at alpine pastures are the most practicable option to obtain the esthetic cultural landscape in Austria for future generations. Small scaled milk processing is practised a lot at alpine pastures in Austria with traditional background from staff working and living at the alpine huts during the summer period. These milk products are high demanded and a trend towards hiking up to alpine pastures and enjoying the culinaric specialities there can be recorded by tourism surveys. The main subject of this diploma thesis was to analyse the agricultural and the touristical approaches throughout the farming period at the Metzgeralm im Lungau which developed the farming practice with traditional milk processing and serving for drinks in 2014. The forage acreage is the base to produce the milk products and is characterized in this master thesis with results of the following analyses taken at the Metzgeralm: soil samples, recording of plant species and fodder samples. It was also possible to show some management activities to improve the grazing system. Carried out expert interviews indicate the touristical approaches and its current situation more detailed. The symbiosis of the agricultural and touristical approaches for the Metzgeralm has been confirmed by an analyses of the employment working hours and its use for touristical and agricultural work activities at the alp.
