Quality and microbiological safety of food, microbiomes in relation to the food chain, microbial spoilage and its pathogens incl. development of qualitative and quantitative detection methods, lactic acid bacteria in various habitats, safety of lactic acid bacteria and their use in the fermentation of plant and animal foods, new plant-based food concepts
