Dissection trial for changing the pig carcass grading system in Austria under Annex II to Regulation (EEC) No 2967/85.
Abstract
The currently used grading method for pig carcasses in Austria has been approved by the European Commission as 'Zwei-Punkte Messverfahren (ZP)' (two point method) until 31 December 1997 (Commission Decision 96/4/EC). An adjustment of the estimating formula for the 'Zwei-Punkte-Messverfahren (ZP)' is required under Regulation (EEC) No 2967/85. In addition, an estimating formula is derived with regard to possible approval of the 'Fat-O-Meater' (FOM) apparatus. The measuring points are fat and muscle thickness 7cm off the midline of the carcass between the second- and third-last (3/4) and third- and fourth-last (3/4) rib respectively. At least 120 left-side pig carcasses have to be used for evaluation. Jointing procedure of the carcass and full dissection of the joints leg, loin, shoulder and belly into muscle, fat and bone were carried out according to the EU-Reference method. Calculation of lean meat content is based on the weight of the left-side carcass prepared according to EU-Reference method (WALSTRA and MERKUS, 1995).
