Waste prevention in Austrian bakeries
Abstract
The project focusses on waste prevention along the whole supply chain of bakeries including suppliers as well as consumers. By analysing of the waste prevention potential not only the bakeries itself shall be included but much more promising options shall be shown for different companies. Waste along the supply chain will be evakluated and the environmental impact will be analysided with hot spot analysis. After evaluation of selected pilot bakeries tailor made waste prevention measures will be developed and during a test phase implemented. Waste figures and experiences will be discussed in several workshops. The results will be implemented in a guideline.
