Abstract
It is the objective of the project to utilise the enzyme trehalose phosphorylase, isolated from fungal sources, for the production of the disaccharide trehalose. The project will deal with the development of a continuous process for the phosphorylase-mediated synthesis of trehalose. A biocatalytic route towards trehalose is proposed via two orthophosphate (Pi)-linked phosphorylases such as a-D-glucan phosphorylase (degrading starch or maltodextrins while consuming Pi) and trehalose phosphorylase (synthesizing trehalose while liberating Pi).
