Abstract
Frozen convenience products are quite popular these days as often only short heating steps are needed to make them ready to eat. Regarding frozen pizza this heating takes usually place in the oven. The possibility to obtain the typical crispy texture as well when using the microwave, could help to further shorten the heating process and thus offer better convenience properties. The aim to produce a frozen pizza which can be successfully heated in the microwave, was reached by systematic optimisation of relevant parameters.
