Iron Enrichment of Baby and Child Food on Sorghum Basis
Abstract
A well-balanced diet of babies and young children is a problem in particular in developing countries. In Sudan the traditional carbohydrate-rich staple food is primarily sorghum. Using this cereal for the production of baby food would be a problem due to its low iron content. To compensate this lack of iron, raw materials with higher iron contents (e.g. white beans) should be incorporated in sorghum products. Thus a manifold range of baby food products which meets the local nutritional habits should be worked out by development of suitable formulations and processes. These products should offer a well-balanced nutrient composition and in particular a high content of bio-available iron.
