Abstract
Bread cubes are important and often used ingredients in the Austrian kitchens. Usually they are industrially produced by cutting of wheat breads which were baked for this special purpose. Due to economic reasons a continuous production process would be useful for this product too. Therefore the aim of this project was to develop formulations and processes in pilot scale which are suitable for industrial application after scaling-up.
