Abstract
In the proposed study the variability in the chemical composition of diverse cereal species (e.g. amaranth, quinoa, buckwheat, einkorn, emmer) of Austrian and Hungarian experimental farms will be investigated. Besides starch, ash, crude protein, crude fat and crude fibre, special account will be taken to dietary fibre and phenolic compounds.
