Abstract
The project aims to investigate the generation of (modified) alternative food components (especially proteins) through microbial fermentation. Extraction of target molecules from cells by means of pulsed electric fields (PEF) treatment will be extensively studied. Moreover, PEF-induced growth stimulation of the microbial cells will be investigated. Tailored processing routes for novel food compounds, esp. proteins, will be explored.
