Feeding strategies for improving quality and food safety of pork from organic farming
Abstract
The composition and physiology of the gut microbiota of farm animals is of economic interest, because they influence the healthiness and the well being of the animals. This is a prerequisite for efficient and economic livestock farming and is also important for food safety and quality. Within the project main groups of the gut microbiota will be analysed applying cultural enumeration methods. Pathogenic bacteria (Brachyspira sp., Lawsonia sp., Salmonella sp.) will be analysed by PCR-based methods. The results of the project will help to optimise the feeding strategies of pigs in organic farming and will also enhance the quality and food safety of pork.
