Development of an oat-based gluten-free beer
Abstract
Within this company cooperation project supported by the FFG, an oat-based gluten-free beer should be developed. Thereby, initially numerous technological challenges like filterability, enzyme activity and so forth have to be tackled. Furthermore, quality problems of the few currently commercially available gluten-free beers as insufficient body, “less beer-like” taste etc should be solved.
