Use of a special cereal variety for different food products
Abstract
The first step in this project, which was created in cooperation with Saatbau Linz, is to gather as much as possible actual information about the named topic. Afterwards this special cereal variety should get analysed in regard to its nutritional relevant contents and its functional properties within the scope of a master thesis. In the pilot plant, belonging to the Division of Food Technology, the use of this cereal variety in different food products (e.g. noodles) should be investigated.
