Creation of pasteurized beatable egg white and its application in convenience products
Abstract
The first step in this project, which was created in cooperation with Amering Salzkammergut Eiprodukte GmbH Co KG, is to fix the multiplicity of problems during industrial production of pasteurized beatable egg white. Afterwards those technological problems should be addressed within the course of a master thesis. In the pilot plant, belonging to the Division of Food Technology, a process should be developed in laboratory scale which should be followed by an adaptation according to the technological options said company offers. Furthermore a “natural” way to improve the shelf life of the products should be found.
