Development of snacks based on fruits or vegetable
Abstract
Within the European Union the market demand for “healthy” food, respectively food with a low content of energy, fat and/or salt, increases continuously. This project is arranged as a diploma thesis aimed at providing consumers alternative snack products based on fruits and/or vegetables. The first step is to request for information about different processing of fruit and vegetable. Afterwards an evaluation of similar products on the present food market should be conducted. Finally a new, innovative snack product should be designed.
