Abstract
Based on the knowledge about the correlation of food processing technologies and resulting modification of functional and nutritional food properties, a transfer of industrial food processing concepts for the development and optimization of kitchen applicances will be performed. Depending on the type of kitchen equipment and the processing variables, the evaluation of the resulting product quality will be carried out with a focus on sensory and nutritional aspects.
