Improvement of the body quality of cheeses from raw milk without silage feeding of the winter period by modification of feeding.
Abstract
The project aims to modify the composition of milkfat, i.e., fatty acid composition, by means of a modified feeding regime and to evaluate any resulting influences on physical quality parameters (colour, texture) of raw milk cheeses. Based on previous findings, improvements of both properties are expected. Chemical and sensory analses will be performed to monitor possible negative effects.
